Herbed Cheese and Walnut Stuffed Mini Peppers

These Herbed Cheese and Walnut Stuffed Mini Peppers are an easy make ahead snack to keep you fueled all day long.

Ingredients

Servings   4   Serving Size   4 pepper halves

  • 1 cup 2% milkfat cottage cheese
  • 1/2 cup chopped walnuts
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 8 mini sweet peppers, sliced in half lengthwise

  2. Fill each pepper with cottage cheese mixture.
