White Bean and Tomato Bruschetta Salad



4 appetizer salad or 2 entrée size salad servings

About $1.73-$3.46 per serving

2 small tomatoes, diced or 1 (16 oz.) can no-salt-added canned diced tomatoes, drained and rinsed
1 clove garlic, minced or 1 teaspoon garlic, minced from jar, minced
1 green onion, chopped, only green parts
1 (8 oz.) can white beans (such as Cannellini beans), drained and rinsed
2 tablespoons fresh basil, chopped or 1 teaspoon dried
1 tablespoon balsamic vinegar
2 teaspoons extra virgin olive oil
? teaspoon black pepper, to taste
¼ cup low moisture, part-skim shredded mozzarella
4 cups mixed greens or arugula

  1. Combine all ingredients except salad greens and marinate 5-10 minutes.
  2. Toss with salad greens. Serve chilled.
