Spiced Red Cabbage

Celebrate Oktoberfest or any other winter occasion with this festive dish of red cabbage, apples, and spices.


3 cups shredded red cabbage (about 12 ounces)
1/2 cup water (plus more as needed)
1/4 cup cider vinegar
1/4 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
2 medium tart apples, peeled, cored, and diced
1 tablespoon sugar

Cooking Instructions

In a large saucepan, stir together the cabbage, water, vinegar, allspice, cinnamon, and nutmeg. Cook, covered, over low heat for 15 minutes, stirring occasionally and adding 2 to 3 tablespoons water if needed during cooking.

Stir in the apples. Cook, covered, for 5 minutes. If necessary, uncover and cook until all the moisture has cooked away.

Stir in the sugar.

Cook’s Tip: Tart apples include Granny Smith and Gravenstein. Among the varieties that are tart but have a hint of sweetness are Braeburn, Jonathan, McIntosh, pippin (or Newton pippin), and Winesap.
