Delicious Decisions: Spinach Parmesan

If you have company coming, you can easily double or triple this side dish. You can even make it the night before, then quickly reheat it in the microwave.


Cooking spray
2    10-ounce packages frozen chopped spinach, thawed and squeezed dry
3/4 cup finely chopped onion 
1/2 cup fat-free sour cream
3    tablespoons shredded or grated Parmesan cheese
1/3 cup fat-free milk
1/4 teaspoon garlic powder
1    tablespoon shredded or grated Parmesan cheese

Cooking Instructions

Preheat the oven to 350°F.

Lightly spray a pie pan with cooking spray. In the pan, stir together all the ingredients except 1 tablespoon Parmesan. Cover with aluminum foil.

Bake for 25 minutes, or until the onion is just soft.
Sprinkle with the remaining Parmesan.

Cook's Tip

If you decide to triple this recipe, use a shallow 13x9x2-inch baking dish so the onion will cook through completely.
