Roasting is cooking with dry heat, which means you don’t need to add liquids like water or broth. Roasting can be done in the oven or over an open fire.

Often when we hear the word roast, we think of roast beef, but you can roast all types and cuts of meat, chicken and even fish. You can also roast a wide variety of vegetables.
